![]() ![]() It was advertised as a cooking class for kids ages 3 and up, but it turned out that Miss P was the only 3-year-old in the bunch. Phoebe and I took a Mommy-and-Me type of class last weekend at Classy Kids Cook, here in North Carolina. Anyway, here we are with minutes to go before the leprechauns start a’leaping, but at least the cookies have finally arrived. One is the basic roll-and-cut routine, using a shamrock cookie cutter I got at Micheal’s, way back when I thought I’d do a timely St. (And next year, maybe I’ll add more spinach to see just how green we can get.) They’re not the technicolor shade of shamrock that you’d get from the stuff in the bottle, but they’re so much better for you (thanks to the spinach), that I think they’ll do anyway. I’m trying to stay off the artificial coloring these days and found that adding spinach puree made these little cookies a little green. I took out some butter, added some whole wheat and in this case spinach. To Ina’s wonderful recipe, I did what I usually do. Inspired by their change of heart, I whipped up a remade batch of the Barefoot Contessa’s shortbread cookies. It will not may not last but I’ll take full advantage of this new phase. They’re offering each other their toast, then miraculously putting their own socks and shoes on–and all with big, happy smiles. Suddenly our girls became “super polite”, looking for ways to be helpful, patient and kind. It reminded me of that book where the Berenstain Bears forget their manners. But this morning when Paul and I mentioned working toward a picnic dinner at the playground tonight, as in, we only get to go if everyone is very nice, everything changed. We’ve had a whining, crying, tantrum-throwing, Pull-Up-removing time of it for days now. I’m sure this never happens at your house, but this has been one of those weeks. Place cookies on waxed paper to dry.OUR KIDS HAVE BEEN MISBEHAVING. Using a plastic bottle, or a spoon, drizzle the opposite color across the top of the cookies.Dip the cooled cookies by one end into the coating being careful not to break the cookies. Melt the candy coating according to package instructions. In the meantime, prepare the candy coating.Remove them from the oven and place them on a cooling rack to cool completely. Using a large shamrock cutter, cut out the cookies and place on a baking sheet lined with parchment or a silpat. Preheat the oven to 350 degrees and spread a bit of flour on the table and roll out dough to approximately 1/4 inch thick.Take the dough and form a large circular mound and flatten it out and cover it in plastic wrap and place in the refrigerator for 30 minutes.Add the sugar and vanilla and mix until incorporated. In a large mixing bowl, mix the butter until creamy.In medium bowl, whisk together the flour and the salt.2 bags of candy coating ( mint chocolate and green).(2 sticks) unsalted butter, room temperature I simply dipped half the cookie in the melted chocolate (Be careful at this point as the cookies are very delicate and will break if you make them too heavy) I then laid them on a piece of waxed paper and used a squeeze bottle filled with the opposite color melts to drizzle over the top of the cookie to finish off the look. I used a mint chocolate and a green variety to achieve the look and taste I was looking for. I then used two types of melting chocolates (by Wilton)to decorate them. These cut-outs start with a very simple shortbread dough that require just a few simple ingredients. It’s a very nostalgic activity for me and I’m glad that my kids enjoy helping in the process as well. Cut-out cookies have always been my favorite since I was a kid! I have just always liked the whole process of rolling out the dough and finding cute holiday cutters and then decorating the cookies with some type of frosting. So for these shamrock treats, I made some shortbread cut-out cookies. It’s enough to lift my spirits knowing that at least they are confident that fairer weather is on it’s way! □ ![]() But at least the birds know spring is just around the corner I have noticed them chirping and singing a lot more lately in the early morning light. The weather around here sure doesn’t realize it as we got another few inches of snow dumped on us in the Chicago area today. Patrick’s Day fast approaching! Well, that and chocolate of course!! Can you believe that we are already several days into March? That is all that is on my mind lately with St. ![]()
